Looking for Books or DVD on culinary instruction?

I would like to do some light training in the culinary arts. I’m looking for a series of books or DVDs that would provide serious instruction. Something I could study at home and avoid going to school to be a chef. This is simply for my own benefit and not to be a professional. So anyone got a good book list
that maybe one of the schools use.. or that you might recommend?

“The Professional Chef” by Gisselin is used as a textbook at many culinary schools. ( I am not the author and the book is free at the library).
